So over the weekend one of my clients, Lizzie, kindly brought me in a Protein Cupcake that she made from home….and it was unreal!

So naturally i stuck a photo onto the Ocean Fit Instagram live feed and got a number of people messaging asking where I got it from, then how it was made.

As you guys were so interested I have managed to get the ingredients and process.

Ingredients: 

2 large eggs
3 tablespoons of Honey
Zest from 3 lemons, finely grated.
3 Tablespoons of juice from these lemons.
1 teaspoon of vanilla extract (I use MyProtein vanilla flavdrops).
2 teaspoons of sunflower oil
220g of coconut flour (or can use normal plain flour).
100g of vanilla protein powder
275g of Greek yoghurt (I use Fage 2% unsweetened).

Optional: lemon curd for filling.

Recipe:

1. Pre-heat oven to gas mark 4/180 degrees.

2. Whisk egg, vanilla flavouring and honey until thick and creamy (about 3/4 mins).

3.Add lemon zest, lemon juice and beat for another minute until thick.

4. In another bowl sift together the baking powder and flour. Fold into the above mixture. Take care not to over mix.
5. Add in the yoghurt and oil.

6. Pour the mixture evenly into muffin cases (fill about 3/4 full). If you want to add a lemon curd filling, fill the cases half full with cake mixture, add a spoonful of lemon curd and then a spoonful of cake mixture on top until case is 3/4 full).

7. Bake for 25-30 mins at gas mark 4/180 degrees until golden brown (until a knife/toothpick  inserted comes out clean). Leave to cool and dust with icing sugar.

8. DEMOLISH!
